An immaculate hotel in a small, riverside country town, the Mont Aigoual is ideally located for exploring both the Cévennes and the wonderfully scenic gorges of the Tarn and Jonte.

It’s one of those Logis de France where the personality of the owner is very much to the fore. One of our reviewers surmised that Stella Robert, who inherited from her great-grandmother, runs the place with a ‘friendly, iron fist’. Sure enough, guests benefit hugely from her attention to detail, her pride in the constantly updated accommodation and her infectious good humour. Bedrooms at the back of the hotel overlook the swimming pool and parc (the grounds are huge, given the town centre location). But those on the narrow quayside should be almost as quiet at night and noticeably cooler in summer.

The Provençal-style restaurant is the domain of the avuncular Daniel Lagrange, one of a dying breed of chefs who do a little tour of the tables when time permits towards the end of service. His award-winning cooking has evolved over the years but remains delectably unpretentious. There’s even a green vegetable with every main course – practically unheard of in France and a constant gripe of British tourists, given that ‘markets abound in the most wonderful selection’.
