The Cesne family's pieds-dans-l'eau hotel on the Cotentin peninsula needs little introduction. Devotees are unanimous in their praise. On a tidal estuary in a small fishing port cum summer resort, it is near superb beaches and a marina.

Laurent Cesne's cuisine is thought exceptional and recognised by Michelin with a star. Sardine filet in a white balsamic vinegar marinade with tart cucumber spaghetti is a signature starter, as delectable as the tempting desserts. The same inventive flair has been appreciated by vegetarian guests.

At the front of house, Mme Cesne and her staff work hard to ensure everything is spot-on. The sumptuous décor is best described as ‘top-notch ocean liner’ (albeit in dry dock), with panoramic views from the saloon and sun deck over an estuary which can pong at low tide.

The first and second floors of the main building have been recently rebuilt to provide private, sea-view terraces for the best bedrooms, all stylishly contemporary and with very swish bathrooms. Other rooms have good facilities but may look onto the little street. Some are small and perhaps a bit basic but fine as an overnight bolt hole for out-and-out foodies on a single-minded gastronomic Tour de France.
